Cook time: 45 mins | Prep time: 15 mins | Serves: 6

Ingredients.

  • 3 large pink lady apples, thinly sliced with mandoline, not peeled

  • 325g pancake pre mix

  • 330ml almond milk, any preferred milk

  • 1/2 cup flaked almonds

  • 2 tablespoons honey


Method.

1. Preheat oven to 180ºC (356ºF) fan. Grease a 25cm silicone or non-stick cake dish with butter and set aside.

2. Thinly slice apples and set aside.

3. In a bowl, add pancake pre-mix and almond milk. Whisk and add the apple slices to the bowl. Use your hands to combine the apple slices through the mixture thoroughly.

4. Evenly spread the apple slices into the baking dish and pour over the leftover pancake mixture on top.

5. Evenly sprinkle almonds and drizzle honey on top of the cake.

6. Bake for 45 minutes or until the skewer comes out clean. Keep an eye on the almonds. If browning too much, place foil on top for the rest of the cook.

7. Let cool for 15v minutes and flip out onto a serving plate.
