Cook time: 25 mins | Prep time: 15 mins | Serves: 3

Ingredients.

  • 1 onion, diced

  • 3 garlic cloves, minced

  • 4cm ginger, minced

  • 1 tablespoon Tikka Masala

  • 3 potatoes, peeled and sliced into 1cm rounds

  • 400ml coconut cream

  • 600ml duck broth, see duck broth recipe here

  • 2 cooked duck breast fillets, shredded (see notes)


Method.

1. In a large frying pan add olive oil with onions and a good pinch of salt and cook down for 6 minutes on low.

2. Add the garlic, ginger, tikka masala and potatoes. Cook for 1 minute.

3. Add the coconut cream and simmer for 2 minutes, then add the duck broth. Simmer on medium heat for 15 minutes.

4. Add the duck and stir for 1 minute. Take off the heat and add lime and coriander to serve with rice.

NOTES: Use the duck breast and any extra meat when making the duck broth. Otherwise, you can buy pre-cooked duck breast fillets at the supermarket and use chicken broth to sub for duck broth. I would recommend making the duck broth because it’s absolutely delicious.
