Ingredients.
130g dried cranberries
130g raw whole almonds
90g dried whole apricots
2 tablespoons melted organic coconut oil
2 teaspoons orange zest
2 tablespoons puffed amaranth
Method.
Blend/pulse cranberries, almonds, apricots until fine but not a paste then add the coconut oil and orange zest. Pulse just to combine.
Roll into 15 balls. Place puffed amaranth into a bowl and roll the balls in the puffed amaranth. Press the amaranth on the balls and refrigerate.
NOTE: Will last in the fridge for up to 4 weeks.
