Immune boosting tonic.


Cook time: 2 hours | Prep time: 15 min

Ingredients.

  • 2-3 lemons, sliced or peel. I freeze lemon peels for my tonic when I only need the juice for recipes

  • 200g turmeric, fresh, washed, roughly chopped

  • 1 tablespoon turmeric powder, optional

  • 300g ginger, fresh, washed, roughly chopped

  • 1 tablespoon black cracked peppercorns

  • 1/2 cup apple cider vinegar

Serve:

  • manuka honey


Method.

1. In a 4L - 5L pot add the lemon, ginger, turmeric, cracked peppercorns and apple cider vinegar. Fill the pot up with water with 3-4 litres of water. Depneding on how potent you want your tonic.

2. Bring it up to a light simmer. Simmer on low for 1.5 - 2 hours. Tonic should reduce by 1/4.

3. Let tonic steep until completely cool or refrigerate overnight. Give pot a good mix and strain and decanter into glass Bottles.

4. Serve tonic with a little water and 1 teaspoon of Manuka honey or have as a shot to wake your system up in the morning.

Cooking Notes:

I purchase fresh ginger and turmeric when they are in season and store in the freezer. Cut them after 10 minutes at room temperature.

Turmeric - anti-inflammatory and antioxidant

Ginger - contains gingerol, which has medicinal properties

Lemon - vitamin C and antioxidants

Black peppercorns - vitamins A and C, selenium, beta-carotene

Apple cider vinegar - antimicrobial and antioxidant effects

Manuka Honey - antibacterial, antiviral, anti-inflammatory and antioxidant properties
