Nashi pear, stracciatella and fried caper salad.
Cook time: 1.5 mins | Prep time: 10 mins | Serves: 2-4
Ingredients.
60g baby rocket
1 nashi pear, thinly sliced
1/2 cup stracciatella cheese
1/4 cup baby capers
50 ml extra virgin olive oil
1/2 lemon, juice
1 tablespoon honey
1/2 teaspoon chilli flakes
salt and pepper
Garnish:
1 pinch chilli flakes
1 teaspoon honey
1 pinch edible flowers, safflowers
Method.
1. Add olive oil, lemon juice, honey, chilli flakes, salt and pepper to a jar and a lid to seal. Secure lid and shake well. Set aside. Can make 2 days in advance.
2. Place capers into a hot frying pan with 1 teaspoon of olive oil or butter. Stir for 1.5 minutes and take off the heat.
3. On a serving platter add rocket, nashi pears, stracciatella, fried capers with pan juices and pour dressing over the salad.
4. Top with chilli flakes, honey and edible flowers.
