Cook time: 15 mins | Prep time: 10 mins | Serves: 2

Ingredients.

  • 3 organic carrots, peeled and thinly sliced

  • 1 teaspoon cumin

  • 1 teaspoon smoked paprika

  • 1 teaspoon sumac

  • 40ml extra virgin olive oil

  • pinch of salt

Serve with

  • drizzle olive oil

  • 1/3 cup yoghurt

  • 1/2 tablespoon pomegranate molasses

  • mint leaves


Method.

1. Preheat oven to 200°C fan forced (390°F) and line a baking tray with parchment paper.

2. Mix carrots, cumin, smoked paprika, sumac, oil and salt.

3. Lay carrots flat on baking tray and bake for 15 minutes. Serve with yogurt, olive oil, a drizzle of pomegranate molasses and mint.
