Cook time: 10 mins | Prep time: 5 mins | Serves: 4-6

Ingredients.

  • 6 chicken tenderloins

  • 120g halloumi

  • 1 teaspoon oregano, dried

  • 1 lemon, juice and zest

  • 2 tablespoon’s panko crumbs, gluten-free

  • salt and pepper to taste


Method.

1. Preheat the oven to 180C fan (356ºF). Line a baking tray with parchment paper and add chicken tenderloins.

2. Layer each chicken tender with oregano, halloumi, breadcrumbs, lemon zest and juice, olive oil, salt and pepper.

3. Bake for 10-15 minutes. Serve with side salad and mayonnaise.
