Three cheese and spinach no pastry pie.
Cook time: 10 mins | Prep time: 10 mins | Serves: 5
Ingredients.
4 eggs
1/2 cup chickpea flour
1/4 cup parmesan, grated
1 cup shredded mozzarella, loosely packed
1 teaspoon Spanish onion, finely grated
70g danish feta, crumbled
1 cup frozen spinach
1/2 teaspoon mild curry powder
You will need a pie maker.
Method.
1. Mix eggs and chickpea flour until smooth with a whisk. Add the rest of the ingredients and combine.
2. Use a full dessert spoon to fill each pie maker hole and cook for 8 - 10 minutes (until golden on top).
3. Serve with yoghurt with a squeeze of lemon stirred in.
Cooking notes: This can also be enjoyed at room temperature.
