Cook time: 45 mins | Prep time: 20 mins | Serves: 6

Ingredients.

  • 150g raw or activated cashew nuts

  • 150g raw or activated macadamia nuts

  • 25g coconut oil

  • 4 free range eggs, separated

  • 1/2 teaspoon of honey

  • 2 1/2 teaspoons of apple cider vinegar

  • 1/4 cup plant-based milk

  • 35g coconut flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon sea salt


Method.

1. Preheat oven to 160°C fan forced (320°F).

2. Grease a loaf tin and line it with baking paper.

3. Place nuts and coconut oil into a processor and blend until smooth.

4. Add egg yolks and blend until just combined.

5. Add honey, vinegar, and milk. Mix to combine and scrape into a large bowl. Then fold in the coconut flour, baking powder, and sea salt.

6. In a separate bowl use an electric beater to whip egg whites until stiff peaks form. Then fold into the nut mix in 3 stages with a spatula.

7. Place batter into the loaf tin and cook for 45 minutes or until a skewer comes out clean. Let cool and serve.

Cooking Note: Keep in the fridge or cut into slices and freeze slices.
