Cook time: 8 mins | Prep time: 10 mins | Serves: 2

Ingredients.

  • 1/2 cup risoni pasta

  • 1 cup of tomato passata

  • 1 garlic clove, chopped finely

  • 1 1/2 cups water or vegetable broth

  • 1 small broccoli, cut finely

  • 1/2 cup of ricotta

  • salt and pepper to taste

Garnish

  • Basil leaves

  • Extra virgin olive oil


Method.

1. In a nonstick frying pan add the pasta, garlic, passata and water. On the lowest burner place the pan on the stovetop and stir whilst bringing it up to a light simmer.

2. Simmer on low for 2 minutes, add the broccoli and simmer for another 6 minutes stirring throughout. Turn the heat off. Add salt and pepper to taste.

3. Take off the stovetop and add dollops of ricotta, fresh basil and olive oil.
